DIY- Eggs & Tomatoes with Crispy Sweet Potato

For our first DIY (Do-It-Yourself) recipe we wanted to do something easy, cheap, yet delicious at the same time. And this recipe is definitely the best way to kick start your day. Although this dish may be usually associated with breakfast, we feel this would be perfect for lunch and dinner as well!
Considering most of the ingredients are staples that are readily available in every kitchen/pantry, this recipe is really easy to make and almost effortless.

What you will need:-

– A handful of parsley (Set aside a little extra to garnish at the end)
– 2 cloves of garlic
– 2/3 eggs as per your choice
– 3 ripe tomatoes
– 2 white onions
– 1 can of diced tomatoes
– Seasonings : salt, pepper & sugar (1 tablespoon of each)
– EVOO (Extra Virgin Olive Oil)

Begin by finely chopping the onions, tomatoes, garlic, sweet potatoes and parsley.

Start by sautéing the onions and garlic in around 2-3 tablespoons of olive oil till they become translucent.

At this point add in the freshly diced tomatoes and cook till it’s slightly reduced.

Afterwhich, stir in the canned tomatoes and let it simmer for about 5 minutes.

Add in the parsley and tomato paste and let it simmer on low heat for about 10-15 minutes stirring occasionally with the lid on. (Add a little water to the mixture if required to help thicken and reduce the mixture).

Once the tomato mixture has reduced, season with salt, pepper and sugar and stir well.

Create indents in the tomato mixture and crack eggs ensuring the yolks are not disturbed (we used 3 eggs).

Cover with lid and cook eggs for 2 minutes and your eggs will be perfect and runny. Finally slice the sweet potato and fry with olive oil for 5 minutes on each side or until golden brown. Garnish your eggs with parsley and fried sweet potato and your are ready to go.
