It’s pretty evident we’re huge breakfast enthusiasts. Moreover, Egg – addicts! So it’s quite obvious most of our DIY posts would be breakfast related. This post, is just another 🙂
We wanted to do something fuss free, something with the least amount of ingredients, yet something delicious. Having said that, we present to you our very own Breakfast Parcels!
These are perfect for the weekend and most of the ingredients would probably be readily available in your fridge or pantry.
What you will need:
-Readymade Puff Pastry – easily available in all supermarkets. We got ours from Spinney’s as there were already cut out into squares (Bingo!): Dhs7
-Babybel Cheese – We like cheddar. You can honestly use whatever you prefer or whatever is available at home.
-7 Eggs (we made 6 parcels, so we needed 6 eggs plus an extra one for your egg wash)
Begin by defrosting your puff pastry. It is supposed to have a clay like consistency. So if it feels like a wafer, defrost it in a microwave for about 10 seconds and you are good to go (Defrosting is important because your puff pastry could crack). Using a cupcake tin mould, line the puff pastries to form cases.
In the meantime, chop up about 6 to 8 cherry tomatoes. Place them in a bowl. Add 3 to 4 tablespoons of olive oil and chopped up basil and mix well. Grate your Babybel cheese and set aside to use later (any other cheese available can also be used).
Add a tablespoon of the cheese into each parcel to act as a moisture barrier and then spoon in the Cherry Tomato and Parsley mixture to each parcel and place the tray in a preheated oven at 180 degrees and bake for 10 minutes.
Remove the tray from the oven and sprinkle cheese on top. Your breakfast parcels are now ready. We like our breakfast parcels with grilled Ham and Roasted tomatoes, but feel free to use whatever accompaniments you have available in your pantry 🙂
