DIY – 15 Minute Pasta Alla Carbonara

For our latest post on DIY recipes we decided to try out something that takes literally minutes to prepare. Its comfort food, it’s cheap, it’s authentic, it’s Italian and it’s delicious! It’s our very own No-Fuss Spaghetti Alla Carbonara!

The quantity we made suffices for four people. Here’s what you’ll need:
-1 pack of Spaghetti. We chose whole wheat spaghetti but you could always use whatever you prefer
-Parmigianino Reggiano (Parmesan cheese). You will need about 150 – 200 grams of this cheese, available in almost any supermarket.
-4 whole eggs and an extra egg yolk to add to the creaminess
-Seasoning (salt and pepper)
-For our meat we used Pancetta that had been pre-cubed. If pancetta isn’t available you can always use any type of ham or bacon that has been finely cubed.

Method:
First up, Meson Plus! (fancy French term which means “setting up”)
Begin by whisking together 4 eggs in a bowl (one egg per person) and add an extra yolk which will add the creaminess of the sauce.

Grate the Parmesan cheese and combine it with the egg mixture.

Final step, season the Egg and Parmesan mixture well with a pinch of salt and pepper and set aside for later.

We can now begin by bringing water to a boil and adding a few pinches of salt to it. Once the water is boiling, add the Spaghetti and leave it to cook for about 8 to 10 minutes.

In the meantime, heat up a skillet with about 3 to 4 tablespoons of Olive oil and fry the Pancetta until it starts to caramelize and brown. Ensure that whatever meat you’re using is finely diced and are all approximately the same size (this prevents uneven cooking).

In the same skillet used to fry the Pancetta, add the Spaghetti. Mix the pancetta and spaghetti well for about 2 minutes and then TURN THE HEAT OFF.

At this point, while the spaghetti is hot, add the egg mixture and mix well. The residual heat of the spaghetti will cook the egg mixture, make sure your spaghetti isn’t too hot, else your eggs will scramble. Serve it on a plate and sprinkle with grated parmesan and there you have it, your Spaghetti Alla Carbonara is ready!  #HappyFeasting
