Restaurant Review – Vivaldi

A couple of days ago we were honored to be invited to the celebration of The Mozzarella Market at Vivaldi by Alfredo Russo located in Sheraton Dubai by the creek. Not only did we get to indulge in delicious and high end quality mozzarella, but we also got to meet the Michelin star himself!

Alfredo Russo is world renowned for his respect for Italian culinary traditions and his humble and welcoming nature, which reflected in Vivaldi as well.

We were seated before the beautiful view of the creek and were presented with our menus. We loved how each course of our five course menu was inspired by Mozzarella however; the cheese wasn’t too over powering.

For our first course we had a very refreshing Bread and Fior Di Latte Mozzarella soup with onion bread and capers. We loved the sweetness of the caramelized onions and the texture of the onion bread. The broth was simple and refined and definitely soothing to the palette.

For our second course which is a starter, we had the Summer Caprese Salad with Treccia Mozzarella. It was no surprise here that the mozzarella tasted beautifully light and of the highest quality, we could eat five plates of these easily! The tomatoes added a perfect complement to the mozzarella as well.

Our third course which was a pasta dish was probably the best dish of the five courses we’ve had. It was smoked buffalo mozzarella ravioli with eggplants. The texture of the ravioli was thin, delicate and perfectly al dente. The stuffing of the mozzarella and eggplant was delicious and packed with flavor!

Our fourth course was a Slow Cooked Amberjack with buratta, oregano, pea’s ice and lettuce. This dish let the amberjack shine more than the buratta, however we aren’t complaining! We felt the combination of the cheese and the amberjack as a whole dish was a fairly odd concept; however the element of delicious taste and good quality ingredients used helped us enjoy the dish clean!

Lastly, for our dessert we had Coffee “granite” with fior di latte cream. The dessert was beautifully presented in a tall glass. We loved the consistency of the cream and were amazed with the fact that mozzarella was incorporated into it. The granite had a strong essence of coffee, however it was balanced with the cream.
