There’s always a rush of excitement right before we head to one of the most luxurious hotel’s in town, and it’s safe to say that our experiences dining at Palazzo Versace Hotel have been nothing less than phenomenal. During our recent visit to Vanitas, one of the eight lavish restaurants at the hotel, Pallazo Versace were kind enough to offer to a luxurious ride to and from the hotel. Talk about fancy first impressions.
Located at the magnificent Pallazo Versace Hotel lies a restaurant that graces the luxury of the hotel in the most beautiful way. Vanitas, an Italian restaurant that flawlessly merges the authenticity of classic Italian food with the finesse of an impeccable fine dining set up, delivers expertly crafted Italian flavors using high end quality imported produce and herbs picked fresh from the hotel’s garden!
We started off with the Grilled Octopus with Citrus Bavarese and Confit and Shaved Fennel, since our served mentioned it’s one of the most popular dishes in the menu. He was right. The beautifully cooked octopus combines perfectly with the flavors and textures of the fennel. Not to forget that luscious Citrus Bavarese sauce that wraps the entire dish up perfectly.
We can’t dine at an Italian restaurant and not try their Burrata (fresh Italian cheese made from mozzarella and cream). Vanita’s Burrata with Grilled Focaccia Bread and Garden’s Heirloom Tomatoes were absolutely luscious and divine! The texture and taste of the Burrata itself was perfect, however the dish was missing a bit more tomatoes and a drizzle of balsamic to enhance its flavor.
Without a doubt, the best dish of our entire meal was the Coral Lobster “Chitarra”(spaghetti) with Canadian Lobster Sauce, Cherry Tomato Garden’s Basil and Creamed Bisque. We dont know where to begin with this dish. The spaghetti was cooked perfectly al dente, the lobster was juicy and generously served and the bisque was filled with aromatic flavors that lightened up our senses. This could easily be one of the best pasta dishes we’ve had, and we highly recommend you trying this dish whenever you dine at Vanitas.
For mains, we opted for the Lacquered Monkfish with purple artichoke and Multicolor Chard. The presentation of this dish was spot on! It honestly looked too beautiful to destruct. Having a soft spot for monkfish made loving this dish a lot easier and the combination of artichokes with monkfish absolutely floored us away (Needless to say by the time we were done the plate was cleaned spotless).
We also opted for the Slow Cooked Lamb with Pumpkin Gnocchi and Seasonal Mushrooms. The glaze on the lamb and tenderness of the meat itself was the hero of the dish. It’s probably not one of the best lamb dishes we’ve had, but it tasted delicious nevertheless.
For desserts we opted for the Tiramisu and Mango Tart. The presentation, vibrancy of colors and technique used to create the Mango Tart was flawless. However when it came to taste, the Tiramisu stole the show. The Tiramisu was beautifully layered with a rich serving of mascarpone custard, whipped cream and coffee infused ladyfingers. It may be a simple dessert, but it ticked all the boxes for us!
